Mexico in the Őrség

Mexican-born chef and pastry chef Yazmin Salazar plays an equal role in shaping Pajta’s culinary identity. Her background brings Latin American flavour, acidity, spice and texture into a kitchen built around Hungarian ingredients and the Őrség landscape. Working alongside István Akács, she helps create a style that is progressive, personal and precise, with boldness kept in balance. Her pastry training also sharpens the kitchen’s attention to structure and detail. At Pajta, her perspective expands what local ingredients can become, while keeping the menu closely connected to the season.

“Our cuisine brings together Hungarian ingredients, Mexican influences and the individual perspectives of two chefs.”
