Especially the regional dishes from Toledo, in which game dishes play the main role. Specialties on the menu include Manchego pesto with lamb cutlet, trout and beans with partridge, pickles, and seasonal vegetables. Above all, this cozy inn situated in the town of Ocaña distinguishes itself by the quality of the typical La Mancha cheeses. The restaurant even produces its own artisan bread. Chef Jesus Gomez-Monedero obtains stone-ground biological flour, and gives it the precise time of maturation, to bake the best bread in town.
