Ricardo Ehni
Ricardo EhniChef Ricardo Ehni built his career across Peru and Europe before returning to Lima to take on Tragaluz with a steady, long-term mindset. He trained at ICIF in Piedmont and spent a decade in Spain, including four intense years at Pakta, the Adrià brothers’ restaurant, where he worked as sous-chef alongside Jorge Muñoz.

Ricardo Ehni’s cooking starts with top product and a clear point of view. He keeps five Tragaluz classics on the menu, then builds around them with techniques he brought back from years abroad, including ferments and careful contrast work. The result is a kitchen that can move from Nikkei precision to Mediterranean structure, without losing its Peruvian base. He works with small producers and specialist suppliers, from hard-to-find tomatoes to fresh shiitake from the Sacred Valley, and treats each plate as a finished idea, not a collage.
Cocktails & Art
Tragaluz doubles as a bar destination. Fiorella Larrea’s cocktail menu is organised by spirit and mixes recognisable classics with house signatures, designed for both the bar and the terrace. Art is part of the experience too: Mateo Liébana’s installation is updated every six months, and paintings can be purchased directly from the restaurant, with pieces rotating as they find new homes. Tragaluz also hosts gatherings and guest moments that the team announces via its channels, keeping the programme flexible and current across the year.
Miraflores, Lima’s coastline
Tragaluz sits in Miraflores, Lima’s best base for walking, dining and sea views. The Malecón runs along the cliffs above the Pacific, linking parks and lookouts that define the district, and it’s where many visitors spend their late afternoons. Close by, Huaca Pucllana adds a rare pre-Inca landmark to the neighbourhood, while Larcomar brings shops and restaurants into the cliffside itself. Miraflores also connects easily to Barranco for galleries and bars, and to central Lima for museums and historic streets.
Small producers, big impact
A lot of Tragaluz’s identity comes from sourcing that most restaurants won’t bother with. Ehni works with select suppliers and small producers, chasing ingredients that don’t usually make it into the mainstream market, then builds dishes around what’s best that week. It’s why the menu has momentum without feeling random. Quality comes first, then technique, then style. That approach also explains the restaurant’s consistency, even while the menu changes slowly over time. You taste the decision-making in every plate.
