Daniel Schmidthaler is chef at restaurant Klassenzimmer of hotel Alte Schule Fürstenhagen. He developed his cooking skills in Upper Austria, after which he worked at restaurants across Europe. In Mallorca, he worked at restaurants Tristan and Formula 1, and in Germany he joined the kitchen teams at Quadriga and Kutscherhaus. He met his wife at restaurant Kutscherhaus. Together, they decided to open their own hotel and restaurant in Fürstenhagen: the Klazzenzimmer. It didn’t take long until Daniel’s exquisite regional cuisine was awarded a Michelin star. We asked the chef some questions about his culinary inspiration, his favourite dish, and much more.
