MORE THAN AN APPRENTICESHIP

Supporting young talent is a central priority for JRE-Germany. A solid and practice-oriented education forms the reliable foundation on which our idea of gastronomy is built. Even the greatest talents need support to find their path into top cuisine. The JRE Genuss Academy offers a unique combination of classical chef training and exclusive additional qualifications.

HOW DO I BECOME A GENUSS-HANDWERKER(IN)?

The JRE Genuss Academy combines a three-year apprenticeship as a cook with a specially developed additional program. Alongside regular vocational schooling at the Paul-Kerschensteiner School in Bad Ueberkingen, trainees receive targeted support from the DEHOGA Academy. Over the three years of training, the additional qualification includes about 30 extra instructional units for further development. These are divided into subject specific content at the DEHOGA Academy and practical modules with JRE top chefs under the motto “Learning from the best.” At the end of the apprenticeship, trainees take the standard IHK exam, supplemented by the specially developed practical JRE additional exam.

The celebratory conclusion is the traditional release ceremony held in a festive setting.

WHAT DO I LEARN IN THE ADDITIONAL JRE-TRAINING?

The additional training is tailored to the requirements of upscale gastronomy and covers specialized topics that go beyond the regular curriculum:

Training year 1

  • Hygiene and allergens in practice

  • English for trainees

  • Etiquette training

  • Bar life for trainees

Training year 2

  • Guest communication

  • Cost conscious work in the kitchen

  • Vegetarian and vegan cuisine

  • Kitchen meets Bar

  • Special course with a behind the scenes look

  • Sales conversations

Training year 3

  • F&B profit and F&B controlling

  • Team principles and team moderation

  • Modern calculation and contribution margin accounting

  • Special patisserie course

  • Herb and spice knowledge

  • Legal fundamentals

In addition to these modules, trainees receive access to the digital learning platform azubi:web, where JRE chefs share practical knowledge through exclusive instructional videos.

WHERE DOES THE TRAINING TAKE PLACE?

The vocational classes take place at the Paul Kerschensteiner School in Bad Ueberkingen. The practical additional training is held at the DEHOGA Academy, which offers a training kitchen, a show kitchen, a training bar and a teaching restaurant. Accommodation is provided in the academy’s boarding facility, where trainees stay in double rooms and receive full board.

BOARDING AND FEES

The training includes accommodation with meals on campus, as well as the additional qualification consisting of 60 instructional units. The costs are structured as follows: JRE additional training: 1,500 euros per year (invoiced to the training company, which may pass the costs on to the trainees). In the training years 2025 and 2026, this amount is reduced to 750 euros per year. | Accommodation and meals: 41.40 euros per night (72 nights per year) | Total cost before funding: 4,480 euros per year Thanks to support from JRE Germany and various funding programs, the trainees’ personal contribution is significantly reduced. *The listed costs are subject to change and may be adjusted as needed.

FUNDING OPTIONS

The state of Baden-Württemberg subsidizes overnight stays with 28.56 euros per night for eligible trainees. | JRE Germany supports the training with a subsidy of 20 euros per night, reducing the costs to 21.40 euros per night. | The top graduate of the year receives a 5,000 euro scholarship that can be used for further training. | Additionally, trainees can apply for 500 euros per year in support from the JRE Genuss Academy support association.
