At DAM restaurant, chef Uroš Fakuč’s cuisine is mainly focused on fresh seafood specialties. He enhances their flavour with the best quality of olive oil and excellent Slovenian salt. Here, diners can enjoy contemporary-style dishes with an international flavour. Each dish is skilfully prepared and beautifully presented, with an emphasis on fish rather than meat. Specialties on the menu include the excellent tuna with squid ink, potato puree and wasabi; and for those with a sweet tooth, the mille-feuille with fresh cream, olive oil and strawberry sorbet. The outstanding cuisine at DAM was awarded a prestigious Michelin star, as well as 16 out of 20 points by restaurant guide Gault Millau.

Restaurant DAM is situated on the outskirts of Nova Gorica, a modern university town in Slovenia near the Italian border. The town is known as the “City of Roses” because of its bourbon roses that are planted every year around the town. In May, the 12.000 roses blossom, resulting in a spectacular experience.
