Wine, Warmth, Timing
Martijn Kellens leads the dining room at Nyde with carefully chosen wines and generous hospitality. His role goes beyond pairing: after nearly ten years as a duo with Celine and five years as a close professional team, every detail is discussed together, from the dish to the glass beside it. His passion for wine brings energy to the room, whether through classic pairings, fresher cocktails and mocktails, or Nyde’s own vermouth made with Domein Marsnil. He gives the restaurant much of its warmth.
“Wine should make the dish feel complete, but it should also bring people into the story.”

Nyde
Nyde is a contemporary gastronomic restaurant in Borgloon, in the heart of Haspengouw. Its name comes from the Danish word for enjoyment, and that idea shapes the whole restaurant: refined food, warm service and a calm, minimal interior. Chef Celine Bleys cooks with the seasons, local produce and classical flavours given a modern lift. In the dining room, sommelier Martijn Kellens brings the same care to wine and hospitality. Together, they have built a restaurant that feels personal, polished and relaxed, with a terrace for quieter summer meals.
