Chef Celine Bleys trained at Hotelschool Ter Duinen in Koksijde and refined her knowledge at L’Air du Temps, Couvert Couvert and De Pastorale before opening Nyde with Martijn Kellens. In the kitchen, she creates elegant dishes with a strong feeling for taste, seasonality and detail. Her cooking starts from pure ingredients and classical flavours, then moves into less expected combinations when they serve the dish. At Nyde, she brings together finesse, balance and a personal way of making local produce feel current.

Nyde
Nyde is a contemporary gastronomic restaurant in Borgloon, in the heart of Haspengouw. Its name comes from the Danish word for enjoyment, and that idea shapes the whole restaurant: refined food, warm service and a calm, minimal interior. Chef Celine Bleys cooks with the seasons, local produce and classical flavours given a modern lift. In the dining room, sommelier Martijn Kellens brings the same care to wine and hospitality. Together, they have built a restaurant that feels personal, polished and relaxed, with a terrace for quieter summer meals.
