Mark & Marjolein: Two Perspectives, One Vision

Chef Kars van Wechem of De Saffraan gives familiar flavors a contemporary edge in this refined veal sweetbread dish. Combining classical technique with unexpected accents, he creates a composition built around richness, contrast, and carefully balanced flavors.
