A Croatian chef of the new generation, Marko Gajski graduated as an IT engineer and developed a passionate interest in food after college. Within a few years, he was appointed head chef at DiVino Restaurant in Hvar. Next, he worked at Perivoj Restaurant in Split, Gauthier Soho in London, Bar Boulud at the Mandarin Oriental Hyde Park Hotel, and Alain Ducasse at the Dorchester Hotel.

The wine list highlights Dalmatian grape varieties, with particular emphasis on Pošip and Grk, complemented by a carefully curated selection of international labels aligned with the character of the cuisine. Excellence in this segment has been further recognised with the Michelin Sommelier Award of 2025, awarded to sommelier Dinko Lozica for creating outstanding wine experiences and elevating the overall gastronomic journey.
