After the Green Stars, Michelin Opens a New Chapter: Mindful Voices
The MICHELIN Guide is opening a new chapter in the way it presents chefs whose work, approach and commitment are helping to shape a more thoughtful future for gastronomy. Chefs who have previously been recognised with the MICHELIN Green Star have now been informed that they are among the first Mindful Voices in the history of the MICHELIN Guide.
According to the MICHELIN Guide, the initiative recognises chefs whom Michelin inspectors see as helping to shape an inspiring gastronomy for a new generation through their dedication and work. The first series of Mindful Voices begins with chefs, while in the future the conversation is expected to expand to include hoteliers and winemakers as well.
In the coming weeks, Michelin will present their stories across its ecosystem, including on its website, app, magazine and social media channels. Each selected chef will receive a dedicated profile highlighting their approach, accompanied by a special illustrated portrait created by a Paris-based artist.
With the new Mindful Voices initiative, Michelin is therefore not only highlighting culinary excellence, but also giving visibility to the voices of those whose work opens up a broader reflection on what the gastronomy of the future can be: more conscious, more inspiring and more closely connected to the values of a new generation.
Among the first Mindful Voices are also two members of JRE-Slovenia:
Grega Repovž, Gostilna Repovž: “We do not do this for recognition, but because we do not know how — and do not want — to do things any other way. This is our way of life: from the farm, ingredients and team to our relationship with the guest. Of course, it is meaningful when such an approach is also recognised by Michelin. I see Mindful Voices as an opportunity for the voices of those who understand gastronomy as something more than just a good plate of food to be heard.”
Ago Špacapan, Špacapanova hiša: “In our kitchen, and ultimately also in our cellar, we create what we ourselves love to eat and drink. We are driven by a passion for co-creating flavours through the kitchen, the cellar, the garden, the vineyard and, above all, through a respectful relationship with nature. We believe that understanding natural cycles is the foundation for creating the best flavours. We see hospitality as a connection of different experiences. For us, Mindful Voices is a recognition of an approach based on authenticity, responsibility and a close connection with the environment in which we live and create.”
