Quévy, Belgium"The poetic name L'Impératif d'éole (loosely translated: the necessity of the wind) represents a relatively new restaurant situated atop the wine cellar of Domaine du Chant d'Éole. We find ourselves here a stone's throw from France near the town of Quévy, just south of Mons. L'Impératif is the result of the shared passion of Hubert Ewbank and chef Benoit Neusy. Michelin awarded the kitchen a star almost immediately. This spot offers a panoramic view over the vineyards. Neusy's cuisine, inspired by his travels, combines local products with international influences. His creativity is expressed in dishes such as grey shrimp, Asian-inspired tuna, and pear poached in house rosé. Michelin praises the refined finesse and skilful sauces. Gault & Millau distinguished both the cuisine and the wine list, which emphasises the expertise of Belgian winemakers.
