His work blends experience with instinct, influenced by everything from his early kitchen memories to his collaborations with other creatives. He sees cooking as part of a larger dialogue—about people, places, and how ideas move. Warm and thoughtful, he keeps things evolving without losing sight of where he came from.

ValenciaFierro is a small-format restaurant in the Ruzafa district of Valencia, led by chefs Carito Lourenço and Germán Carrizo. The 57 m² space seats just twelve guests, creating a precise, personal rhythm between kitchen and table. The menu draws on Mediterranean ingredients and Argentine memories, reimagined with an eye to the future. Each seating becomes a direct conversation between guest and team.
