Chef James Berckemeyer is the chef-owner of COSME Restaurant in San Isidro, Lima, and the driving force behind its comfort-food identity. He trained at Le Cordon Bleu Perú and completed further studies in Italy, then built experience in major kitchens including Astrid y Gastón, El Celler de Can Roca and Arzak. Early on, he learned the job from the ground up in Cancún, cooking by day and waiting tables at night. Today, he brings that discipline to a kitchen that values craft, humility, and food people genuinely want to eat.
