He brings over 20 years of experience, but prefers to keep the atmosphere informal and focused. His cooking is grounded in local produce and driven by the seasons, but it’s also guided by instinct and playfulness. With each new menu, he explores flavour, texture and scent in surprising ways — always aiming to make dining a sensory experience, not just a meal.
