Michelina Fischetti

A Strong Woman at the Helm

Chef Michelina Fischetti leads Oasis Sapori Antichi in Vallesaccarda, carrying forward a family story that began in 1988. Her cooking is built on Irpinian tradition and the recipes passed down through generations, shaped with a clear sense of seasonality and ingredient quality. Much of what she uses comes from small local producers, with key staples, including olive oil, honey, and herbs, coming from the family’s organic farm. Together with her granddaughter Serena Falco, she keeps the cuisine direct, generous, and deeply connected to the region.

Oasis Sapori Antichi in Vallesaccarda, in the province of Avellino, was created to protect and celebrate traditional Irpinian cooking in a way that stays ethical, sustainable, and close to family memory. The dining room is warm and intimate. In the kitchen, chef Michelina Fischetti revisits inherited recipes with respect, choosing seasonal, mostly organic ingredients from the local area. The result is honest cooking built on time, tradition, and the pleasure of sharing a table.
