Chef Pedro Chavarría is the founder of DeMo and the chef behind DeMo Magnolia at Hotel Magnolia in Santiago. His work connects modern technique with the ingredients and everyday references of the city centre, using seasonality as a practical tool for building each menu. He trained in top Latin American kitchens including Boragó in Santiago and Quintonil in Mexico City, then shaped his own identity through DeMo Franklin, where the menu changed with market availability. In 2024, he received recognition at The Best Chef Awards.

DeMo Magnolia restaurant sits inside Hotel Magnolia in central Santiago, with a 15-seat dining room built around one tasting menu. Chef Pedro Chavarría uses the historic centre as his reference point, taking cues from places like Central Market, La Vega, Patronato and Plaza de Armas. The result is contemporary Chilean cooking that stays close to the ingredient, with structure, clean flavours and a strong sense of place. Opened in October 2024, DeMo Magnolia brings the DeMo signature into a quieter setting, with an open kitchen and a focused wine selection.
