Self-taught, with a sommelier diploma and a deep love for craft, he developed his style through instinct, discipline, and later stages in starred kitchens. His cooking is anchored in Lombardy and guided by flavour, precision, and a clear preference for quality over complexity. Fish plays a refined role on the menu, alongside classic local dishes handled with confidence.
