One Table in Loft 6

Markus Gass Chef’s Table in Loft 6 is set inside the old spinning mill in Ziegelbrücke, at the entrance to the Glarus region. This is private dining in its most personal form: one chef, one table and one five-course menu for a maximum of 12 guests. In the long, bright loft, the stainless-steel kitchen stands beside the table, so guests can watch, ask questions and talk with Markus as he cooks. Cristine Hess Gass completes the experience with personal service throughout the evening.

Classic French

Markus Gass cooks from a classical French foundation, using the best products he can find and giving special attention to ingredients from the region. Once a product is in front of him, combinations start to form naturally. The five-course menu brings together some of his best-loved signature dishes and newly inspired creations, shaped by the moment and the guests at the table. The format makes the kitchen feel unusually close: you can see the risotto being finished, hear the thinking behind a dish and taste the result moments later.


Private Dining, Fully Hosted 

Each service at Markus Gass Chef’s Table is exclusive to one group, making it especially suited to private dinners, celebrations and evenings built around food. The experience begins with Champagne and continues through a five-course gourmet surprise menu, with drinks from Champagne to coffee included. Guests usually stay for three to six hours, giving the evening time to unfold naturally. The scale is small, the format is generous and the hosting is direct, with Markus in the kitchen and Cristine looking after the table.


Old Spinnery, Glarus Gateway

The chef’s table is located in Ziegelbrücke, at the entrance to the Glarus region, inside a former spinning mill. The loft setting gives the restaurant much of its character: a long, bright room, an open kitchen, a carefully set table and a relaxed seating area framed by plants. Guests travel here for the intimacy of the format as much as for the food. The setting feels removed from a traditional restaurant, closer to being invited into the private dining room of a chef.


Markus and Cristine

For 18 years, Markus Gass and Cristine Hess Gass ran the Adler in Hurden on Lake Zurich. When that chapter ended, they used the moment to build something more personal. Loft 6 gave them the space to create a chef’s table that fits their way of hosting: Markus cooking in full view, Cristine guiding the service and guests close enough to feel part of the evening. The concept first grew through friends and former regular guests, before food lovers began travelling to Ziegelbrücke for it.
