JRE chef Federico Migliori is the chef-owner of Nello in San Casciano in Val di Pesa, which he runs with pastry chef Chiara Zanetti. He came back to a historic Tuscan restaurant and gave it a new language: recognisable roots, cleaner structure, sharper balance.
