Chef Jolien Van Puyvelde opened Restaurant Vas after years of building experience alongside her partner, Robby Baccaert. She trained at the O.L.V.P. hotel school in Lokeren and worked at Restaurant ’t Korennaer under Michelin-starred chef Edwin Van Goethem. Today, her cooking brings a French and Belgian base with lively influences and a clear eye for “vas” produce, fresh ingredients sourced as close as possible. She cooks with care and precision, and she makes the most of every ingredient through a no-waste mindset.
