Chef Leonel Díaz is a Colchagua native, and his cooking at Clos Apalta Restaurant starts with the valley’s ingredients. Much of the menu comes from the estate’s vegetable garden, with additions from the Santa Cruz farmers market and small producers nearby. His style is local in flavour and confident in technique, with a French influence that shows in the structure and finish of each dish. Guests can also join him at the market to choose ingredients together, then cook them back in the kitchen.
