Chef Rik Opstals brings a grounded, intuitive style to G7. His cooking is anchored in French technique but shaped by the garden in Montfort and the pluktuin beside the restaurant. Rik prefers clarity over complexity, building dishes around clean flavours, gentle contrasts and fresh notes drawn from herbs, flowers and vegetables grown close to home. Before G7, he spent six years honing his craft at De Bokkedoorns, experience that sharpened his precision without taking away his down-to-earth approach. For Rik, sustainability is not a statement but a natural part of staying close to origin.

G7 sits in the 1634 Gruizenkerkje in the heart of Sittard, a restored monument where contemporary dining meets centuries of history. The restaurant spans the old church and the adjoining 1593 timber-framed house, creating an intimate space shaped by soft light, flowing curtains and warm materials. Guests choose a menu of eight, ten or fourteen creations, revealed only through a hint of ingredients to keep the experience fresh and surprising. Much of the produce comes from G7’s own vegetable garden in Montfort and the pluktuin beside the restaurant, supported by local growers who share their respect for origin.
