His French-leaning style is shaped by fresh tones, balanced contrasts and modern techniques that give familiar ingredients a new perspective. The menu changes with what the garden, pluktuin and local producers offer. Excess harvest is pickled, dried or preserved for winter, anchoring the kitchen in its own landscape. The result is a sequence of creations that feel intuitive rather than showy, with flavour as the central thread and an emphasis on clarity, depth and clean execution.

G7 offers more than a dinner service. Private dining is available in the glass-fronted kitchen space, where guests can watch the team at work. Seasonal events highlight the harvest from the garden, including tastings built around preserved produce from earlier in the year. The drinks menu features local sparkling aperitifs and a large selection of Limburg wines available by the glass, thanks to the Coravin system.
