Pairings With a Greek Signature

Sommelier and host Robby Baccaert shapes the front of house at Restaurant Vas and builds a drinks approach around each guest and each menu. He trained at the O.L.V.P. hotel school in Lokeren and gained experience at Restaurant ’t Korennaer under Michelin-starred chef Edwin Van Goethem. In 2019, he was voted “Sommelier of the Year, East Flanders region” after completing his sommelier training. His selection pays special attention to Greek wines, chosen to suit both North Sea flavours and Mediterranean touches.
