A Michelin-starred owner-chef with a talent for creative Italian cuisine
After fastening the apron in a pastry lab when he was 11 years old, chef Stefano Di Gennaro earned his diploma at the Hotellerie Institute of Molfetta in 2004. Stefano has had a long career in restaurant work, spending many years in various kitchens across the country. Despite that, Stefano never lost his innate sense of humility, regardless of the fact that his cuisine has been recognized as one of the best in Southern Italy. He was even awarded a prestigious Michelin star for his outstanding culinary skills. A dream came true for Stefano when he opened Quintessenza Ristorante, and a new beginning where the best ingredients will be prepared in the most respectful manner.

Trani (BT), ItalyQuintessenza started as a discreet restaurant with one priority: looking after the guest. Today it sits in a 19th-century palazzo in Trani, overlooking the Castello Svevo and the Cathedral, while keeping its family spirit at the centre. Four brothers run the house, and their father, a farmer, supplies olive oil and produce from his own land. Chef Stefano Di Gennaro’s cooking follows the same line. He works with local ingredients and gives himself room to play with ideas, while keeping the result precise and restrained. The menu avoids showmanship and goes for the core of flavour, with dishes that feel refined, familiar, and distinctly from this part of Italy.
