Driven by Youthful Energy and High Standards: Gregor Jelnikar on Joining the JRE Community

Gregor Jelnikar is part of a new generation of chefs who combine youthful energy with a strong sense of responsibility, dedication, and vision. He understands the value of perseverance and innovation in the culinary world. Now, as the newest member of the JRE-Slovenia association, he shares his thoughts on what drew him to the community, what the membership means to him, and how he hopes to contribute to its future.

How did you perceive JRE before becoming a member? What attracted you the most to want to join?

In Slovenia, JRE represented a guarantee or conviction that both the service and food would be of a high standard. I never left a JRE member restaurant disappointed, which made me want to become part of such a community myself. Moreover, many JRE chefs were individuals I deeply respected and whose advice and recommendations I greatly valued, so it was an honor to be invited. On one hand, it's a recognition of the effort I’ve put in, and on the other, it’s an opportunity for personal and professional growth—good advice is always just a click away.

What does being part of the JRE community mean to you – as an individual and as a restaurant?

As an individual, membership is recognition of past work and motivation for continued excellence. For the restaurant, it can help attract new guests—especially those who appreciate top-level cuisine and service.

What do you hope to contribute to the JRE community?

Youthful energy, fresh experiences gained from starting and running a restaurant from scratch, and an active membership focused on striving for positive change.
