JRE & MIELE MASTERCLASS 5.12.2023 RESTAURANT KORAK

The last JRE & MIELE masterclass for the 2023 season took place at the Miele experience center in Zagreb on December 5.

The participants were the restaurant and winery Korak with Bernard Korak, the owner and chef, and the winery Podrumi Mladina and small producers - the Marfish sea bass breeders!

As a premiere for this masterclass, we tasted a new wine from the winery Podrumi Mladina, a sparkling wine called Terra Falcinos. This sparkling wine made from chardonnay, pinot blanc and pinot noir was produced using the traditional method, aged for 15 months on yeasts and another 5 months in the bottle. Terra Falconis sparkling wine celebrates the noble coexistence of falcon and man by selecting sun-drenched grapes of the highest quality.

We enjoyed the beginning of the masterclass with snacks from Bernard, who prepared sea bass sashimi - Marfish.

 

The introduction with sparkling wine was prepared for us by Bernard Korak. The gastronomic part started with the classic traditional introduction of Korak restaurant, which welcomes every guest in their restaurant. The introduction consisted of homemade sourdough bread, cream, butter and cheese that they make themselves, and their homemade cured meat cuts. The tradition of this restaurant is also the initial, basic point from which they always start with the tasting menu.

 

The second wine from the winery Podrumi Mladina was Erdoro Blend One from 2022.

An aromatically rich wine with a leading note of Traminca in the beginning, while over time it reveals the Riesling character, gradually and elegantly. Pinot gris gives it softness and elegance, balancing the freshness of Riesling and the aromaticity of Traminac. This sumptuous combination offers layered scents of fruit, floral aromas and mild spices, with a mineral accent that reveals the terroir of Plešivica. With a strong, dry, long-lasting and juicy taste, Blend one is the perfect gastronomic accompaniment to fish, seafood, poultry and veal.

With the main course of roasted sea bass fillet in butter sauce, we drank Erdoro Pinot Gris from 2022. Varietally recognizable example of softness and delicacy! In the sip, you can feel the aromas of pears, vineyard peaches and meadow flowers, with a hint of minerality. It has a medium body structure, the drink is both seductive with its balance and finish, as if created for everyday enjoyment.

 

We enjoyed the last masterclass for this season and we are faithfully awaiting the return to Miele kitchens and the new combinations of chefs, small producers and winemakers that await us in 2024!

RESTORAN KORAK & PODRUMI MLADINA & MARFISH

 

Posljednji po redu za sezonu 2023. JRE & MIELE masterclass održao se u Miele experience centru u Zagrebu 5.12.

Njegovi akteri bili su restoran i vinarija Korak sa Bernardom vlasnikom i chefom kuhinje te vinarija Podrumi Mladina i mali proizvođači – uzgajivači brancina Marfish!

 

Što smo se kušali saznajte u nastavku!

Premijerno za ovaj masterclass kušali smo novo vino od vinarije Podrumi Mladina a radi se o pjenušcu pod nazivom Terra Falcinos. Ovaj pjenušac od chardonnaya, pinot blanc-a i pinot noir-a proizveden je tradicionalnom metodom, odležao je 15 mjeseci na kvascima te još 5 mjeseca u boci. Terra Falconis pjenušac slavi plemeniti suživot sokola i čovjeka odabirom osunčanog grožđa najviše kvalitete. 

Uživali smo u početku masterclassa uz zalogaje Bernarda koji je pripremio sashimi od Brancina – Marfish.

 

Uvod uz pjenušac pripremio nam je Bernard Korak. Gastronomski dio započeo je sa klasičnim tradicionalnim uvodom restorana Korak koje dočekuje svakog gosta u njihovom restoranu. Uvod se sastojao od domaćeg sourdough kruha, vrhnja, maslaca i sira koje sami rade te njihovih domaćih suhomesnatih narezaka. Tradicija ovog restorana ujedno je i početna, bazična točka od koje uvijek kreću sa degustacijskim menijem.

 

Drugo vino od vinarije Podrumi Mladina bio je Erdoro Blend One iz 2022. godine.

Aromatski bogato vino s vodećom notom traminca u početku, dok s vremenom otkriva karakter rizlinga, postupno i elegantno. Pinot gris mu daje mekoću i eleganciju, balansirajući svježinu rizlinga I aromatičnost traminca. Ova raskošna kombinacija nudi slojevite mirise voća, cvjetne arome I blage začine, uz mineralan naglasak koji otkriva terroir Plešivice. Snažnog, suhog, trajnog I sočnog okusa, Blend one savršena je gastronomska pratnja ribi, plodovima mora, peradi I teletini. 

Uz glavno jelo pečenog filea brancina u umaku od maslaca pili smo Erdoro Pinot gris iz 2022. Godine. Sortno prepoznatljiv primjerak mekoće I delikatnosti! U gutljaju se osjete arome krušaka, vinogradarske breskve I livadnog cvijeća, s notom mineralnosti. Srednje je strukture tijela, pitak je I zavodljiv svojim balansom I završetkom, kao stvoren za svakodnevno uživanje.

 

Uživalo smo na posljednjem masterclassu za ovu sezonu a vjerno iščekujemo povratak u Miele kuhinje te nove kombinacije chefova, malih proizvođača i vinara koje nas čekaju u 2024. Godini!
