Passing on Values, Not Just Recipes: Uroš Štefelin Becomes Membre d’Honneur of JRE-Slovenia
Chef Uroš Štefelin is one of the most respected names in Slovenian gastronomy, known for his dedication to tradition, mentorship, and the use of local ingredients with a modern touch. After years of actively shaping the culinary landscape and supporting the younger generation, he has been named Membre d’Honneur of JRE-Slovenia. In this interview, he reflects on his journey within the association, the meaning of this recognition, and why passing on values and knowledge is key to the future of the profession.
How would you describe your journey with JRE?
Being part of JRE has been an exciting experience because you truly see and feel how hospitality keeps evolving and connecting—not only locally, but also across borders, as JRE extends far beyond Slovenia. This kind of community brings energy, new connections, and support that pushes you to grow—both personally and professionally. I still remember how inspired I was visiting Hiša Linhart and seeing the impact firsthand. Through JRE, I’ve taken part in training programs, international exchanges, and collaborative projects that promote the best of Slovenian gastronomy. I believe this community gives chefs something truly valuable: support, a sense of belonging, and lifelong learning.
What does being a Membre d’Honneur mean to you? How do you see your role in the community?
Being a Membre d’Honneur means being a mentor—not only in the kitchen, but also in terms of sharing and transmitting values. It’s about offering guidance, supporting growth, and helping the next generation find their place, while staying connected to the values and mission of JRE.
Which values and traditions of JRE have proven most lasting, and why are they important to you?
Turning 50 was a personal milestone—a chance to reflect on where I began and how far I’ve come. As a Membre d’Honneur, I may have taken a step back from the spotlight, but I remain actively involved. Today’s young chefs are more confident, better educated, and progressing faster than we could in the past—and JRE provides them with a powerful platform to keep growing.
