Daniel Pozuelo’s cooking starts with market produce and ends wherever his travels have taken him. You’ll taste Mediterranean flavours shaped by Japanese precision and wider international influences, without the usual “fusion” clichés. Dishes can appear at lunch and vanish by dinner, because the menu changes whenever Daniel feels a product has become too common elsewhere. The backbone stays consistent: bold contrasts, clean technique, and food that feels alive rather than polished for show.
Two menus, constant change
The experience at Bichopalo is built around two surprise tasting menus, each with its own reservation times: a 6-course short menu and an 11-course long menu. On top of that, there are daily specials depending on market availability and seasonality, so regulars can come back often and still feel the thrill of the new. If you like the idea of letting the kitchen lead, this format makes every visit feel like a first time.
A local and lively neighbourhood
Bichopalo is in Chamberí, a Madrid neighbourhood with a strong food scene and a very local feel. You’re close to the Ponzano area, which means bars, restaurants, and that fun evening buzz. It’s a part of the city that feels local and lively, with wide pavements, corner cafés, and plenty happening around Cristóbal Bordiú and Ríos Rosas. Come early for a walk around the neighbourhood, or an aperitif nearby.

Guillermo keeps the drinks as changeable as the food. There’s no traditional wine list, just recommendations that move away from safe, familiar picks, updated often with input from distributors.
