The menu at La Ripa speaks of place, memory, and movement. Anchored in Puglia’s deep-rooted traditions, each dish reflects the brothers’ time spent in kitchens across Europe. From their grandmother’s recipes to Middle Eastern spices, Nordic pickling and Thai broths, the influences are woven in with precision. It’s a kind of gastronomic travelogue, yet always in conversation with local producers and ingredients. At lunch, the focus leans more traditionally Apulian; by dinner, the brothers take more risks, offering a contemporary tasting experience that connects their past journeys to the land they’ve returned to.

La Ripa is named after the cliff it rests on, and that setting shapes the experience as much as the food. With sweeping views of Vieste and the Adriatic below, the restaurant feels both timeless and tied to its place. Just outside are centuries-old olive groves, winding coastal roads, sea caves and ancient towers—reminders that the Gargano has long been a place of passage, reflection and discovery. For guests, it’s a rare chance to pause and take it all in.
A new chapter in a historic space
Set inside a 15th-century convent, La Ripa feels both intimate and spacious. The building’s history provides a quiet backdrop to a restaurant looking forward. Andrea and Marcello have modernised the dining experience without losing the sense of hospitality their mother instilled in them. The result is a space where past and present meet naturally, with warmth, restraint and care.
Quiet recognition, growing impact
Andrea’s work has drawn attention beyond Puglia. He was a finalist in the San Pellegrino Young Chef competition and part of the Emergente Chef Centro Sud selection in 2022, standing out for his balance of creativity and restraint. That same year, he also took part in Identità Golose in Milan, presenting his take on grey rabbit with Thai broth—a dish that captured both his technical skill and openness to influence. Though he prefers the kitchen to the spotlight, these moments reflect a chef steadily making his mark, one thoughtful plate at a time.
