Stefano Di Gennaro is owner and chef at restaurant Quintessenza. After Stefano finished his culinary education at Hotellerie Institute of Molfetta in 2004, he joined the kitchens of restaurants across Italy. In 2011 he decided it was time for his own fine-dining establishment. He opened the doors of Quintessenza restaurant, where his finest creative Italian cuisine was soon awarded its first Michelin star.

Quintessenza restaurant draws gourmets from near and far with its artful Italian cuisine and delicious seafood dishes, conjured up by chef Stefano Di Gennaro. Specialties on the menu at Quintessenza include the deliciously marinated amberjack with beetroot and tomato; and the tortelloni with ricotta, red shrimp, and Trani Muscat bisque. Those with a sweet tooth will especially love the “Farmer's breakfast” consisting of soft ricotta ice cream with extra virgin olive oil, biscuits and fruit sauce. Good to know: various vegetarian and vegan options are also available, just ask the staff.
There is a sophisticated feel to the beautiful town of Trani, especially in the summer when the marina-side bars are packed. It is a beautiful area to discover, with its medieval churches, glossy limestone streets and crumbling yet charming houses. The cathedral, pale against the deep-blue sea, is the town's most captivating sight.
