The kitchen at Innocenti Evasioni serves traditional Italian cuisine with a modern twist. Specialties on the menu include scallop carpaccio with white asparagus, marinated with tonka beans and butter bean; and the exquisite lamb loin with raw tomato, mashed potatoes with butter, sour cherry sauce and pepper powder. The restaurant aims to work in sustainable eco-friendly ways, for example by eliminating the use of plastic bottles and using a water purifying system.
