Nyde is a contemporary gastronomic restaurant in Borgloon, in the heart of Haspengouw. Its name comes from the Danish word for enjoyment, and that idea shapes the whole restaurant: refined food, warm service and a calm, minimal interior. Chef Celine Bleys cooks with the seasons, local produce and classical flavours given a modern lift. In the dining room, sommelier Martijn Kellens brings the same care to wine and hospitality. Together, they have built a restaurant that feels personal, polished and relaxed, with a terrace for quieter summer meals.

Two Seasonal Menus

Celine Bleys’ cooking is refined, seasonal and product-driven. She works from classical French techniques, then adds modern influences and subtle flavour combinations that can surprise without feeling forced. Nyde serves two regularly changing menus: one vegetarian menu centred on vegetables, and another built around meat, fish and seafood. Local terroir products play an important role, alongside inspiration from French tradition, regional ingredients and the couple’s travels. Purity, balance and finesse guide the kitchen, with each dish given its own identity through the season.


Terrace and Vermouth

During the summer months, Nyde welcomes guests onto its terrace, a quiet place to enjoy Celine’s cooking and Martijn’s pairings in the sun. The restaurant also has its own Nyde Vermouth, created with Domein Marsnil. It is made from their Pinot Noir, vinified as white wine, then flavoured with carefully chosen botanicals for freshness, spice and character. Served as an aperitif or available to take home, it gives guests another taste of Nyde’s style beyond the menu.


Fruit Country Around Borgloon

Nyde is located in Borgloon, surrounded by the orchards and rolling landscapes of Haspengouw. The area is known for walking and cycling routes through fruit country, with nature, heritage and gastronomy close together. In spring, the forest of Zammelen is covered with blooming wild garlic. In summer, the strawberry fields around Grootloon show another side of the region’s produce. That setting fits Nyde’s kitchen well: ingredients, seasons and landscape are part of the same story, both on the plate and outside the restaurant.


Art in the Room

The restaurant experience at Nyde also extends into the room itself. Celine and Martijn work with Weckx Art Advisory, who select contemporary artworks for the space. The pieces are chosen to match Nyde’s character: refined, surprising and attentive to detail. They give guests something to notice between courses, start conversations and add an extra layer to the visit. In a minimal interior, the art gives the restaurant something extraordinary, aligned with the care found in the kitchen and service.
