French Base, Southern Accents

Justin Koopman cooks from a classical French base, adding carefully chosen herbs, spices and Mediterranean touches from Spain and Italy. His style is modern, seasonal and grounded in recognisable products, with garnishes, creams and sauces used to give each dish more depth. The restaurant offers two menus, shaped by the time of day and the rhythm of the season. At lunch, the food is lighter and refined; in the evening, the experience becomes more layered, with carefully prepared dishes and wines chosen to support the full table.

It feels far removed from the pace of the Randstad, while Delft is only around fifteen minutes away by bike or boat. The location gives Aan de Zweth a rare position: easy to reach from the city, yet surrounded by water, nature and Dutch history.
