Described as “a culinary experience through the seasons”, Roman’s innovative menu takes inspiration from the local nature and the fertile land of the region and his style of cooking very much inhabits the concept of “Slow Food”. He uses fresh ingredients in various ways, constantly evolving, experimenting and refining his recipes.
