Today, she is a host, the managing director of Combuchont®, and a passionate collector of knowledge. The word ‘rau’ means ‘rough’ in German. The restaurant’s name refers to the local scenery and inhabitants of this secluded spot. It’s this wild nature that chef Klemens aims to translate to his exciting cuisine and rich dishes. Inspired by the harmonious interplay between nature and mankind, this chef is on a mission to showcase only the best that nature has to offer.
