A chef with discipline and instinct
Vladimir Popović came into the kitchen through an unusual route, moving from organisational sciences and a love of systems into full-time cooking. He started at the lowest positions, worked his way up fast, and built his style around structure, repetition, and constant learning. Today at Puter Fine Bistro, he focuses on French cuisine as a craft, with dishes designed in layers and finished with restraint. Fresh, high-quality ingredients matter to him, as does leaving the kitchen in order, every service.
“Time is my first ingredient, it makes the difference between good and great. Patience allows a dish to become what it’s meant to be.”
Puter
Puter Fine Bistro sits on a corner in Vračar, opposite Kalenić Market, with a light, composed dining room that works from morning coffee to late dinner. The team runs the room with calm focus, so the experience stays consistent all day. On the plate, classical French bistro technique meets Belgrade’s appetite for flavour, with Serbian ingredients and references used with restraint. The wine list follows the same idea, moving between France and Serbia with a clear point of view, built to match what is on the table.
