Krautfleckerl - Cabbage pasta

Krautfleckerl is a classic Austrian dish made with noodles and tasty cabbage. It has a hearty, slightly tangy flavor and is especially a favorite during the colder months – perfect for both lunch and dinner. The best part: it requires only a few ingredients, most of which are usually already in your pantry. When you need something quick, it's often these simple, tried-and-true recipes that you turn to. This recipe is part of the Pasta e Basta! project by Pastificio dei Campi and JRE-Jeunes Restaurateurs, created by Chef Christian Ranacher.

PREPARATION INSTRUCTIONS

  1. Cook the pasta according to the package instructions.

  2. In a large pan, sauté the onions until they begin to brown.

  3. Add the caraway seeds, marjoram, and cabbage, and continue to cook until everything is golden and caramelized.

  4. Deglaze the pan with Madeira and vegetable stock.

  5. Add the cooked pasta, then season to taste with salt, pepper, and a touch of cayenne.

130 g. Type of Pastificio Pasta
40 g. Bacon
90 g. Cabbage
35 g. Onion
1 g. Caraway seeds
1 g. Marjoram
20 g. Madeira
25 g. Vegetable Stock
A pinch Salt
A pinch White pepper
A pinch Cayenne

HOW TO PLATE

Simply plate on a pasta plate & add some fresh herbs or sprouts on top.
