Born in Palermo in 1993, JRE chef Gianfilippo Gatto chose cooking early, guided by family influence and mentor Vincenzo Pinto. His training took him beyond Sicily, with roles in Italy and abroad including Il Cipriani on Giudecca in Venice, Santa Venere in Maratea, and Villa D’Amelia in the Langhe.

Chef Gianfilippo Gatto cooks with Sicilian memory as his starting point, then applies modern technique to sharpen flavour, texture and contrast. Local, seasonal ingredients guide the menu across meat, fish and vegetable-focused dishes, with a strong interest in smaller producers and niche products that deserve a wider audience. The result is contemporary Sicilian cooking with clear references to the island, presented with precision and colour. You’ll see tradition in the ideas, and a modern hand in the execution, from refined sauces to careful plating.

A’Cuncuma offers more than a wine pairing: you can also book a dedicated Sicilian wine tasting curated by Valentina Crescimanni. The selection moves between established estates and smaller producers, with a special focus on discoveries across the island, including Etna and other regional zones. Tastings can be shaped around the menu, a grape variety, or a specific area of Sicily. It’s a good option if you want to explore the island through the glass, with guidance that stays practical and specific, not performative.

A’Cuncuma restaurant is set behind Palermo Cathedral, in the dense network of streets around Via Judica and Piazza Beati Paoli. This part of the historic centre is known for churches, small shops and named alleys that still carry old stories, including references to the Beati Paoli and the underground passages and crypts mentioned in local writings. It’s an area that rewards walking, with sights close by and a mix of local life and visitors in the evenings.
