"The poetic name L'Impératif d'éole (loosely translated: the necessity of the wind) represents a relatively new restaurant situated atop the wine cellar of Domaine du Chant d'Éole. We find ourselves here a stone's throw from France near the town of Quévy, just south of Mons. L'Impératif is the result of the shared passion of Hubert Ewbank and chef Benoit Neusy. Michelin awarded the kitchen a star almost immediately. This spot offers a panoramic view over the vineyards. Neusy's cuisine, inspired by his travels, combines local products with international influences. His creativity is expressed in dishes such as grey shrimp, Asian-inspired tuna, and pear poached in house rosé. Michelin praises the refined finesse and skilful sauces. Gault & Millau distinguished both the cuisine and the wine list, which emphasises the expertise of Belgian winemakers. The interior stands out with an ornamental tree with golden leaves and a glass wine cabinet, while guests can admire the maturing wines on their way up."

L’impératif d’éole’s cuisine

This hotel restaurant’s daring menu provides you with only the very best that sea and soil have to offer. Inside the castle, you can indulge in seasonal, high-end dishes that are created with great technical control. Expect a 3-course menu with dishes such as tonnato-style baked veal sweetbreads, lemon confit, capers, and anchovies from Cantabria. Of course, the menu is complemented by an exciting wine list. During summer, you can also experience “La Terrasse”: a culinary barbecue on the castle’s terrace, in the Arondeau estate’s gorgeous garden. Here, you can enjoy meat and fish grilled on the Ofyr barbecues. Simple yet refined outdoor cooking by chef Benoît Neusy and his team. This menu features tapas and other starters, matured meats, seafood, and the chef's “confinades”. The courses are topped off with a delicious dessert.

Surrounded by an impressive 15-hectare garden, hotel restaurant L'Impératif in Roucourt offers all the tranquility you could wish for. At the same time, the estate of Arondeau is easily accessible and conveniently located within a 20 to 35-minute drive from Lille, Valenciennes, Tournai, and Mons. Nearby sights include Pairi Daiza (Brugelette), a privately owned zoo and botanical garden which is home to over 7,000 animals.
