Chef Hugo Charcolin redefines local gastronomy with his creative fusion of Guérande’s finest ingredients and Japanese culinary techniques. Working closely with regional producers, the menu celebrates the freshness and richness of the area’s bounty, from vegetables grown nearby to seafood sourced within 20 kilometres. The Faubourg menu and Artists' menu provide a choice between a three- or five-course journey, each plate crafted to surprise and delight.
