Laurent SmallegangeAs a child, Laurent Smallegange spent a lot of time in the kitchen of his family’s restaurant. He decides to follow a cooking education at the Belgian Hotel School. After this, he gains experience at restaurants that operate at the highest level in the culinary world. Smallegange is only 22 years old when he takes over restaurant Spetters in 2011. Despite his very young age, the award-winning chef develops a unique culinary signature with a focus on refinement, presentation, and flavour balance.

Spetters’ cuisine
Laurent Smallegange shows you pure and fine products which he prepares creatively according to the seasons. This young chef uses fresh local products such as eel and crab in his dishes, as well as international influences and a sour touch. Favorites kitchen staples at Spetters restaurant include homemade kimchi and ceviche which are balanced, with each exciting ingredient assuming equal importance in creating an abundance of sparkling flavours. The chef’s specialties are langoustine with artichoke, zucchini, barilotto and gravy barigoule, and sea bass with fideuà, squid, chorizo and beach crab gravy. Each dish is perfectly paired with an excellent wine from the extensive wine list, to complete an extraordinary gastronomic experience.
Breskens surroundings
Located in the harbour town of Breskens, on the first floor of a building next to the marina in the Westerschelde river, Spetters has a magnificent view of the yachts docked here. The interior of Spetters is spacious, light and minimalistic. The ambiance in the dining area is inviting and relaxed, which can also be applied to chef Laurent Smallegange's innovative, fun, and casual cuisine. The surrounding area is great for hiking along the shore, or you can explore the area by bicycle and follow one of the cycling routes. Breskens beach is a stone’s throw away from restaurant Spetters. An interesting sight is the Breskens Lighthouse, a beautiful cast-iron lighthouse, constructed in the 19th century, adding to the picturesque feel of this small harbour town.
