The Lab, the Classics, Caccia

Every year, Uliassi builds a full season around three clear options. The “Classics” collect the dishes that have shaped the restaurant’s identity over time. “The Lab” brings ten new plates, created after an extended period of research and experimentation with the whole team. “Caccia” is dedicated to wild game, developed with the same precision as the seafood dishes. It’s a simple structure for guests, and it keeps the restaurant moving forward year after year.

Senigallia by the water

Senigallia is an Adriatic seaside town with a strong food culture and an easy, lived-in rhythm beyond the summer months. Uliassi is set right on the channel harbour, steps from the beach, in a spot that shows the town at its most real: boats, sand, and the constant movement of the waterfront. The main dining room faces the sea, while a smaller room looks towards the pier and the Misa River. It’s a location that stays tied to the coast in every season.

A family house, now a big team

Uliassi still feels like a family house by the sea, even as the team has grown to more than 35 people. Catia Uliassi remains a key presence in the dining room, and service is led today by Filippo Uliassi and Elisa Cao. In the kitchen, Mauro Paolini and the team bring new skills into the restaurant every season. The idea is consistent: welcome guests warmly, cook with curiosity, and keep raising the bar through work rather than noise.
