Herbert Hintner’s cooking starts with the product: milk from the farmer, meat from local farms, vegetables and ingredients chosen for quality and origin. The flavours are recognisable, but the structure is contemporary, built with clean technique and a lot of attention to detail. Hintner often points back to the dishes that shaped him early on, like dumplings and farm cooking, then reworks those memories into plates that feel lighter and more precise. The menu follows the seasons closely, and the kitchen keeps a strong link to the producers of Alto Adige.

Margot Hintner curates the wine list with the same priorities as the kitchen: origin, quality and a clear sense of place. Pairings are chosen to sit naturally alongside Herbert’s seasonal menu, and the cellar reflects years of work and recognition from major guides. Alongside service in the restaurant, Herbert Hintner also runs tailored cooking courses. They’re designed for guests who want to understand the thinking behind his cuisine: how he builds flavour, why he chooses specific local products, and how traditional South Tyrolean ideas can be brought into a modern kitchen. Hintner is also known for supporting young talent, and that teaching mindset shows in how these courses are structured: practical, detailed, and centred on real ingredients rather than theory.

Zur Rose is located in the pedestrian centre of St. Michael Eppan, in South Tyrol, surrounded by the wine villages and vineyards that define this part of Alto Adige. The restaurant sits in a historic building with traditional dining rooms, including a wood-panelled Stube and a small vaulted space. Outside, the South Tyrolean Wine Road connects the town to cellars, estates and countryside walks, making the setting a natural match for a restaurant that works so closely with local producers.
