This exclusive Wagyu ribeye comes from Maria Hoop in Limburg, where a passionate family raises their cattle with love and dedication. What once began as a hobby has grown into a small local gem. The cattle roam freely and are known for their distinctive blue tongue and exceptional marbling — resulting in remarkable tenderness and a deep, rich flavor.
JRE-chef Edwin Soumang prepares the ribeye simply on the plancha, seasoned only with salt and pepper, allowing the true character of the meat to shine. In its current seasonal preparation, the Wagyu is served with a roll of red cabbage from the restaurant’s own garden, braised Brussels sprouts, creamy purée, and palm kale, also freshly harvested from the land. As a finishing touch, a Wagyu stew croquette is added, accompanied by a house-made jus infused with roasted rosemary.
