
From Etna to Saillon
Chef Andrea Maugeri comes from Zafferana, a village at the foot of Mount Etna in Sicily. After 22 years in tourism, catering and hospitality, including experience in Sicilian palaces and luxury hotels in Switzerland and France, he brings a broad international background to Nouvo Bourg. His current work is the result of long reflection: Mediterranean cuisine built around local, seasonal, organic produce sourced directly from market gardeners. At Saillon, he combines Sicilian memory with Swiss ingredients, creating food that feels generous, fresh and closely tied to the rhythm of the seasons.

Nouvo Bourg
Nouvo Bourg sits in the historic centre of Saillon, surrounded by medieval charm, quiet streets and a strong local identity. Chef Andrea Maugeri has created a restaurant that feels modern, simple and generous, with two terraces and a casual atmosphere that keeps the focus on the food. The menu moves between several set menus, including a vegetarian option, à la carte choices and dishes of the day.
