Interview with Lukas Nagl


Lukas Nagl is chef at restaurant Das Traunsee. This talented chef is a native of Upper Austria. After working at restaurants around the world, chef Lukas now leads the kitchen team at the Traunsee’s hotel restaurant Bootshaus. Thanks to this culinary philosophy, Lukas received one of Austria’s most coveted gourmet prizes: the “Trophée Gourmet for Creative Cuisine” from À La Carte in 2015. We asked him some questions to get to know him better, about his culinary inspiration career and a whole lot more.

Lukas, how would you describe your cooking style?

I would describe my cooking style as cosmopolitan, despite radical regionality.

What is your favourite ingredient to work with?

My favourite ingredients to work with are soy sauce & miso pastes from our own regional organic producers.

There is no better product than wild freshwater fish.

Who is one of your top suppliers or producers?

All fishermen from the Salzkammergut, because they are at the lake every day in any type of weather.

What is the biggest challenge you’ve faced in your culinary career?

The biggest challenge for me was running a hotel in Africa and having 3 children in addition to my job.

Which gastronomic trend are you excited about the most?

I don’t follow trends.

If you could only eat one dish for the rest of your life, what would that be?

Bread with butter and chives.

What’s one thing in the area that your guests absolutely need to see or do?

I would recommend guests to swim and sunbathe on the other side of the lake.
