Chef Thibaut Spiwack is concerned with environmental issues and ecology. His bold and creative choices result in modern French cuisine with international flavours. A few house's specialties are shredded beef and smoked eel with umeshu smoked broth; and lavender pea purée, with an emulsion and veil of pods, tito pea sorbet and pea poetry. In addition, chef Thibaut serves entirely homemade products, such as organic breads, fresh juices, beers and lemonade from Paris.
