Paolo FrosioChef Paolo Frosio leads the kitchen at Restaurant Frosio in Almè, working alongside his brother Camillo, who runs the dining room and wine programme. Classic modern Italian cooking
Chef Paolo Frosio cooks a classic modern style guided by the season and the local area, with a steady focus on ingredient quality. Dishes often use traditionally prized products, from scampi and lobster to foie gras, pigeon, caviar and truffle, alongside a growing focus on local sourcing and Slow Food Presidia. Everything is made in-house where it matters, including bread, pasta and desserts, and the team works from whole fish and whole cuts of meat to control provenance and processing. The result is precise cooking with clear flavour.
Wine cellar in the tower
Wine is a key part of the experience at Frosio. The cellar sits inside a 13th-century tower and holds more than 1,000 labels, spanning Italy and major international regions. Camillo Frosio oversees the selection and guides guests through pairings with a practical, guest-led approach. In summer, dinner often moves outdoors into the garden, while winter service centres around the dining rooms with their fireplaces, making the setting part of the evening.
Almè, near Bergamo
Almè is a small town just northwest of Bergamo, close to the Parco dei Colli di Bergamo and within easy reach of Milan. The area combines residential calm with green space and foothill landscapes, which makes it a natural setting for a destination meal. Many guests pair lunch or dinner at Frosio with time in Bergamo’s historic centre or a drive towards San Pellegrino Terme and the valleys beyond, keeping the day local and unforced.
A family hospitality culture
Frosio is part of a wider family history in the Bergamo area, starting with a mail coach tavern in the Imagna Valley in the early 1900s and continuing through generations of hands-on service. That continuity shows in the way the restaurant runs: careful organisation, a stable team, and a dining room that treats regulars and first-time guests with the same attention. The aim is simple: an experience that feels generous, well paced, and worth returning to.
